Ingredients:
1/4 cup raw cashews, soaked in water for at least 30 minutes (longer 2-3 hours
if you don't have a high speed blender)
7 oz. extra-firm tofu
1/2 tsp. sea salt
1/2 tsp. tahini
4 tsp. fresh lemon juice
1 1/2 tsps white vinegar
1 Tbls Dijon mustard
2 Tbls apple cider vinegar
2 1/2 tsp. pure maple syrup or agave
2 Tbls. water
1/4 tsp. xanthan gum (I used chia seeds to help it thicken as I didn't have xanthan gum)
Instructions:
Place all ingredients in a high speed blender and blend until smooth and shiny.
