Instant Pot Vegan Dal

Ingredients:

1 large onion chopped
4 garlic cloves
2 Tbls fresh ginger
2 tsp. garam masala
1/2 tsp. ground cinnamon
1 tsp red chili flakes (I didn't use this!  I don't like that much spice)
2 tsp. turmeric
2 tsp. salt (can leave it out if you are SOS free)
1 tsp. ground black pepper
3 cups water
2 cups red lentils
3 large tomatoes cut into chunks
1 can coconut milk (I used the lite)

Instructions:

Place the instant pot on saute mode

Water saute the onion, garlic, and ginger 

Add in the spices and stir until fragrant

Add in the water, lentils, tomatoes, and coconut milk

Stir well so the lentils aren't stuck together

Close the lid, and vent to sealing.  Cook on high pressure for 8 minutes and let it do a natural release.
