Veggie Balls (High Carb Hannah)

Ingredients:

1 can chickpeas
1/2 red bell pepper
1/2 onion
2 cups kale (I used spinach)
1/2 cup frozen corn
1/2 cup frozen peas
1 Tbls fresh basil
1 tsp. oregano
1 tsp. garlic powder
1 tsp. paprika
1 1/2 tsp. liquid smoke
1/4 cup walnuts, pumpkin seeds, or flax. (just one)
1/2 to 3/4 cup oats
3/4 tsp. salt or to taste

Instructions:

Drain and rinse chickpeas, place in a food processor.

Fry red bell pepper, onion, and kale in a skillet with a bit of water.  Place all ingredients into the food processor, and blend.  Taste batter and adjust spices to taste.

Roll into large balls and place on a cookie sheet with parchment paper or silicone baking mat.  Place in a 375 degree oven for 30 minutes.

As they cool they will harden up.

I served mine in spaghetti sauce on a hoagie bun.  Yum!
