Zucchini Fritters

Ingredients:

4 cups shredded zucchini
1/2 of a sweet onion chopped
1 tsp. salt
1/2 cup whole wheat flour
1 Tbls flax
3 Tbls warm water
3 Tbls nutritional yeast (nooch)

Instructions:

Preheat the oven to 400 degrees

Shred the zucchini and place in a bowl lined with a dish towel, or cheese cloth.  Sprinkle it with salt and let it sit for 10 minutes.

Make a flax egg by putting the Tbls of flax and water into a small bowl, and letting it sit for 10 minutes as well.

Chop the onion, and then place it in a large bowl with the flour and nooch.  Mix it together, and then add the flax egg after 10 minutes.

Squeeze as much water out of the zucchini as you can and then place it in the bowl with the other ingredients.

Line a baking sheet with parchment paper.  Wet your hands and shape the fritters into balls and then flatten them and place them on the sheet. 

Bake in the oven for 25 minutes on one side, and 25 on the other side.  Until they are crispy. 

Serve with any kind of sauce you like.  I used cholula and some homemade soy yogurt.
