Zucchini Muffins Sugar Free (No really, they are)

Ingredients:

2 cups banana puree (made from 4-5 very ripe bananas
1/2 Tbls. baking powder
1/2 Tble baking soda
1 Tbls apple cider vinegar
2 cups rolled oats
1 cup oat flour
1 cup ground millet (put it in your blender and grind it down from the whole seed)
1/2 cup ground flax see
1 cup unsweetened applesauce
4 cups loosely packed zucchini
3 chopped apples (I used one)
2 Tbls. cinnamon or pumpkin pie spice

Instructions :

Preheat the oven to 350 degrees

Place the bananas in a food processor with the s blade, and puree them down.  Add the baking powder, baking soda and vinegar, then pour them into a large bowl.

Add the other ingredients, and mix together.

Divide into 24 muffin liners or silicone muffin tins.  (No oil!)

Bake for 45-60 minutes.

Open the door and then them cool in the oven before eating them!

They freeze great!
