Come On We All Have Challenges!

     It's been a while!  I just haven't been myself or up to much of anything lately. 

     What are some of the challenges you face everyday with eating this way.  What are some of the things you have overcome?

     This past year has been rough.  As most of you know I was diagnosed with APS antiphospholipid syndrome.  It is an autoimmune disease that I will have the rest of my life.  I will be on anticoagulants the rest of my life.  With the med I'm on, I don't have to be worried about the greens that I eat, but it's still a hassle, and I hate taking any kind of medication.  One of the reasons I started with essential oils.

     The challenges or the struggles that I have faced this year is fatigue and headaches.  I don't know if it's a side effect of the drug, or I'm just getting older.  Probably a little of both.  I have to make sure that I get enough rest, and eat right.  Along with fatigue though comes the hard chore of wanting to cook and eat right.  How do you overcome something like this.

     I have learned this past year, that when I'm feeling good, I have to batch cook.  Then I always have something good in the house to eat.  We always have rice in the house.  You can do anything to rice to make it taste good, and rice goes with lots of things.  Like my family says, rice is life.  Last week I made Spanish rice.  I have an instant pot, so it makes it super easy.
     2 cups of rice
     3 cups of water
     4 oz of tomato sauce
     4 oz of canned diced green chilies
     1 tsp onion powder
     1 tsp garlic powder
Put it all in the pot, and hit the rice button.  DONE!

     I also just made High Carb Hannah's Bliss Balls.

     1 cup of soaked for an hour dates
     1/2 cup coco
     2 cup oats
     Place it all in the food processor, and blend until it makes a dough.  Roll them in your hands and place them in an air tight container in your fridge.

  I actually doubled the recipe and added in some powdered peanut butter.  I get up at the crack of dawn, and I'm generally not hungry at all, so these little snacks will fill my tummy while I'm at work and can't leave my desk.  I usually eat a banana on my way.  These bliss balls are better than Lara Bars that contain oil, and lots of nuts.  Nuts aren't bad, don't get me wrong but a lot of nuts aren't good especially if you are trying to lose weight. 

     These kinds of recipes make life for me so easy.  I also made red lentil chili, (also in the video) and while it's a bit more involved it lasts for a couple of weeks to put in my lunches.  I only work 3 - 12 hour shifts a week, so it doesn't take much to throw stuff together.

     I love salads, but making a salad just for lunch sometimes can be too overwhelming, so I try to have a big salad already made up for the week.  Then if I want to add more to it like rice and beans, it's easy to do.  Same with the salad dressing.

     There is nothing worse than having nothing set up to eat.  It just sets you up to eat junk. It truly sets you up to fail.  I find that if I have good things in the house to eat, every week make sure I batch cook a few things, don't have junk in the house that I eat well, and stay on a lifestyle that is saving my life.  Truly saving me and my family.  At times I have cheated, but I feel terrible after.  It's just not worth it to me, and I cheat more often if my home is not prepared with whole foods.
