Banana Bread (oil, and animal products free)



This is possibly the best bread I have had!

Ingredients
1 cup whole-wheat pastry flour (or 1 cup + 3-4 tbsp spelt flour)
3/4 oat flour (I ground oats in my blendtec)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 cup pureed overripe banana
1/3 cup pur maple syrup
1/2 cup plain non-dairy milk
1 tsp vanilla
3-4 tbsp non-dairy chocolate chips (semi sweet)

Instructions
Preheat oven to 350 
In a large bowl blend dry ingredients.  In a seperate bowl bowl, mix pureed bananas and maple syrup, and vanilla  (I blended my bananas with my immersion blender, so they were smooth.  You could also use a blender)
Mix the wet ingredients to the dry ingredients and mix well, and add the chocolate.  
Then instead of greasing the pan (trying to stay away from oil, I used parchment paper in a loaf pan.  You can also make cupcakes with liners)
Bake for 48-53 minutes until toothpick or skewer inserted comes out clean.

Who says you can't have dessert!
