Banana - Maple Granola

Ingredients:

2 ripe bananas
1/2 cup date syrup (on my blog)
1/4 cup water
Pinch of salt
1 tsp. vanilla
4 cups oats

You can also add cinnamon to taste, sunflower seeds etc, but if you add the seeds make more banana mash so that it will stick together.

Instructions:

Preheat oven to 300 degrees.  Line baking sheet with parchment paper.  I used a jelly roll pan that is 13 x 18 inches.

Combine the bananas, maple or date syrup, water, vanilla, and salt in a food processor, or blender and puree until mixture is smooth and creamy.  Add the banana puree to a bowl with the oats and mix well.  Spread the mixture onto a prepared baking sheet.  Bake the granola for 40-45 minutes.  After the first twenty minutes flip the granola so that the pieces get broken up.
