Mexican Bean Bowls

Ingredients:

Rice ( I always have rice in the refrigerator, and I used 1 cup per bowl )
1 can black beans
1 can canned corn ( Or you can use frozen and however much you like )
Bell pepper 1/2 per bowl or less any color
Tomato
Cilantro
Red onion
Salsa
Avocado
Cumin to taste

Instructions:

Drain and rinse black beans if they contain sodium.  Drain corn and place both into a sauce pan, add a bit of water back in so that they don't burn. Sprinkle cumin onto the beans and corn and let simmer until hot.  I didn't measure the cumin, I just put enough on to taste.  I love it so I use a lot.

Place rice in the bottom of your bowl, pour beans and corn over the top.  Top with veggies, cilantro, salsa and of course avocado.
