Dairy Free Cheesecake

Ingredients:

Crust:

1 cup mejol dates
1 cup raw almonds
1/4 cup shredded unsweetened coconut

Filling:

2 cups soaked cashews (I soaked them over night so they would be soft
1 can full fat coconut milk.  (Put it in the fridge so you can skim the hard fat off and use that)  Use the water in smoothies or let your husband drink it!  LOL
1 cup pure maple syrup
1 lemon
1 tsp. vanilla
1/4 tsp. salt

Instructions:

In a food processor, grind, mix the dates, almonds and coconut until they start forming a dough.  Press out into a spring form pan, but if you don't have one, a regular pie plate will work.

In a high speed blender, mix all the filling together until well blended, and creamy.  Pour into the crust, and freeze for at least 4 hours. 

Toppings of whatever you would like.  I used frozen blueberries, with a bit of cornstarch, and a bit of maple syrup.
