Ingredients:
1 package 9 oz, or if you want more 1.5 lbs
1 can of corn drained
1 can of black beans drained and rinsed
2 tomatoes chopped
1/2 red onion chopped
1 orange, red, or yellow pepper
Dressing:
1/2 cup lemon juice
3 Tbls Dijon mustard
2 very small avocados
fresh ground pepper to taste
sea salt to taste
Instructions:
Cook the edamame according to package, then mix corn, black beans, tomatoes, onion and pepper.
In a high speed blender blend all dressing ingredients. Pour over the salad and mix.
