Hawaiian Haystacks (Faithful Plateful)

Ingredients:

Cooked rice (I always use my instant pot and cook 2 cups of rice according to Ipot directions.  It comes out perfect every time)  I always cook a lot, but the rest of the ingredients will make 4 haystacks)
1 20 ounce can of pineapple (I used fresh as it was in my fridge and needed to be used.  I put 1 cup in my blendtec with a bit of water, and whipped it up) 
1/4 cup vinegar
1/4 cup coconut aminos or soy sauce
1/4 cup honey, maple syrup or agave
1/2 tsp. garlic powder
1/2 tsp. ginger (I just used powder)
1 large heaping Tbls of cornstarch mixed with a bit of water

Toppings:

The sky is the limit.
Peas
Tomatoes
Green, red or yellow pepper
Green or red onion
Olives
Kale, or spinach
Any kind of nuts you like. I chopped up a few raw almonds
Sesame seeds

Instructions:

Place the juice (1 cup) of the pineapple in a small saucepan with the vinegar, honey, soy sauce. Mix it all together, and let it come to a boil.  Make a cornstarch slurry, and whisk it into the mixture.

Let it thicken.  I had to add a bit of water because it was too thick!

Chop up the pineapple and add it into the mix. 

Serve up with rice on the bottom, then the sauce, and desired toppings.
