Lentil Loaf

Ingredients:

1 cup of brown lentils
1/2 cup red lentils
3 cups water
1 flax egg (3 tbls flax, 6 tbls water)
4 garlic cloves
1/2 onion, diced
1 bell pepper (any color) diced
1 carrot diced
2 celery stalks diced
1/2-1/4 fennel bulb
1 1/2 cups oats
1 tsp. thyme
1 tsp. fennel
1 tsp.onion powder
1 tsp. sage
2 tsp or more of liquid smoke
1 tbls italian seasoning
1/4 ketchup

Instructions:

Preheat oven to 350 degrees.

To a pot add lentils, water, garlic, onion, bell pepper, carrot, celery and fennel bulb.  Bring to a boil and boil for 30 minutes or until lentils are soft.  I had to add a bit more water.

In another bowl, add the flax with the water and let it sit for 10 minutes.  When the 10 minutes is up add the rest of the spices.

In a food processor or blender, blend the oats.

When the lentils and veggies are done add in the spices and stir to make sure all is blended.  Stir in the oat flour, and stir.

Scoop into a non stick loaf pan.  I used some parchment paper.

Bake the loaf for 30 minutes.  Spread the ketchup on top and bake for another 15.

Let the loaf cool, and sit for another 30 minutes.
