Pumpkin Muffins

Ingredients:

1 cup of pumpkin puree
1/2 cup pure maple syrup
2 eggs (what?  I didn't use eggs, I used 2 flax eggs)
1 Tbls pure vanilla
4 Tbls almond butter
1/4 plant milk
2 and 1/4 cups of oats
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup vegan chocolate chips

Instructions:

Heat the oven to 350 degrees.

Mix 2 Tbls ground flax with 6 Tbls water and let it sit to get an egg like consistency.  About 10 minutes

Combine the wet ingredients in a food processor or high speed blender, and then add the dry on top.

Blend for about 30 seconds or until smooth.  Remember that the oats will have a texture because you didn't blend them into flour first.

Mix in the chocolate chips.

Place in a muffin tin lined with papers

Bake for 22 minutes, or until golden brown.

Allow to cool for 10-12 minutes
