Red Lentil Chili Instant Pot


Instructions:

Ingredients:

1 lb red lentils
2 cans diced tomatoes
1 can of tomato paste
1 red or yellow onion (I used a half of a red onion)
2 large red peppers, seeded and cut in 1/2
6 medjool dates, pitted
8 gloves of garlic, minced
4 Tbls apple cider vinegar
1 1/2 Tbls parsley
1 1/2 Tbls oregano
1 1/2 Tbls chili poswer
2 tsp paprika
1/2 - 1 Tbls cumin
7 cups water
If you like spice add chipolte powder and crushed red pepper flakes to taste.

In a high speed blender blend dates, red peppers, tomatoes and tomato paste, and garlic.  I added the cloves whole as I knew my blender would take care of it.

In the instant pot add the lentils, water, and other ingredients, and the sauce that you just blended up. Set the timer to 25 minutes and let the pressure come down naturally.  I was starving so I waited 10 minutes and did a quick release and it was fine.

Serve over white or brown rice.
