Thai Peanut Sauce Dinner

Ingredients:

4 cloves garlic
1 inch or less of fresh ginger
3 Tbls peanut butter
3 Tbls rice vinegar
4 Tbls soy sauce or braggs aminos, or coconut aminos
3 Tbls honey
6 oz or more of your favorite rice noodle, I used asian rice noodles and ramen

Instructions:

Cook your noodles according to package instructions

Mix all ingredients in a bowl until creamy

Throw in your favorite veggies.  I had some stir fry frozen veggies that I warmed up, and tossed them in with the noodles.

This took less than 30 minutes to throw together.  Enjoy!
