Ingredients:
Any kind of veggies that need to be used up in your fridge.
I used,
1 half of a large onion (diced)
Potatoes 6 small yukons
Celery 4 stocks cut into small pieces
Baby carrots (maybe 3/4 cups) I just threw them in whole.
4 mini colored peppers
3 cups broccoli
Kale I think it was maybe 5 cups. I just added it until the top of the Ipot was full
1 cup dried split peas
1 cup nutritional yeast
1 heaping Tbls of Better Than Bullion veggie
Instructions:
I just threw it all in the Ipot, added 6 cups of water and stirred it good. Then I set it on manual for 20 minutes with a 10 minute self release.
I then used a stick blender to blend it down some, but there are still chunks!
Served it with rice.
This is my new favorite soup!
