Sweet Potato Muffins

Ingredients:

1 cup sweet potato (I use Japanese sweet potatoes because they are so sweet)
1 Tbls ground flax seed
3 Tbls water
2 cups oat flour
1/2 cup coconut sugar
6 Tbls nut butter (I use peanut butter, but any would work)
1 cup plant milk
1 tsp vanilla
1 tsp. cinnamon
1 Tbls baking soda
1/4 tsp salt

Instructions:

Preheat oven to 350 degrees

Prepare flax egg by mixing the ground flax and water.  Let it stand until it thickens

Mix all the dry ingredients together, set aside.

Mix all the wet including the sweet potato, and nut butter.  Mix well until combined.

Add the wet to the dry, and mix well

Bake in a cupcake pan in the oven for 25 minutes.  Let them cool slightly before eating.
